Preheat oven to 190°C / 375°F and line a baking tray with baking paper.
Prior to cooking, wrap tofu in 4-5 sheets of thick absorbent paper. Place something heavy on top i.e. heavy metal based frying pan, cast iron pot for approx. 5-6 minutes which will help press out / remove excess moisture. Then unwrap the tofu and cut into small cubes.
Place tofu into a large clip lock bag then add curry powder, paprika, onion flakes and season with salt. Shake gently to coat tofu. Spray a large non-stick frying pan with oil and heat over high heat. Once hot, add the seasoned tofu. Sauté for 4-5+ minutes, until a slight crust has formed on each side and has begun to turn golden-brown. You will need to flip the tofu cubes as they cook.
Transfer tofu cubes onto the baking tray and bake for about 10+ minutes, or until the tofu has begun to dry out / crisp up. The longer it bakes, the more firmer it gets. Transfer baked tofu cubes onto a plate. Serve hot or cold.
